What do you do when you are facing a court battle with the city Sewer and Water District over the amount of effluent grease you are releasing into the environment? This problem confronted Management Specialists, Inc. and its KFC franchises in Northeast Pennsylvania several years ago.

Management Specialists, Inc. maintains eleven KFC restaurants in Northeast Pennsylvania. According to Rich Costill, the maintenance director for Management Specialists, Inc., the Berwick Sewer and Water District first began monitoring grease flows into the sewers about ten years ago. At the Berwick KFC franchise, which had no system to handle grease flows, a major problem developed. The restaurant at that time was discharging about 500 parts per million of grease to water into the sewer. The maximum acceptable level of grease outflow in Berwick was 200 parts per million. It was apparent that something had to be done, for a date in court was imminent. The solution lay in Big Dipper®. Mr. Costill says that the previous maintenance director had become familiar with Big Dipper® through a convention and had procured literature about our products. When Management Specialists, Inc. presented the literature about Big Dipper to the officials of the Sewer and Water District, they dropped the court case and instead authorized a monthly water sample. When the Berwick KFC installed a Big Dipper® unit, their water readings fell from a consistent 500 ppm to a consistent sub-75 ppm reading. In fact, there have been times when the reading was as low as 7 ppm.

Because of the success of the Big Dipper® unit at the Berwick KFC, Management Specialists, Inc. decided to install Big Dipper® units in the rest of their KFC restaurants. At the Buckhorn Mall in Bloomsberg, PA, the Big Dipper® unit in the KFC is being used as an example for the other restaurants located in the food court. The Sewer and Water District there is cracking down on restaurants in the mall, and the KFC is the only one that is in compliance with their restrictions. As a matter of fact, the Sewer and Water District likes to have Management Specialists, Inc. representatives at their meetings to explain the benefits of having a Big Dipper® unit in operation in their kitchens. The sewer officials are completely satisfied with the operation of Big Dipper® equipment and the systems' ability to remove grease.
According to Mr. Costill, one of the best aspects of using a Big Dipper® system is its reliability. Some of his units have been in operation for almost nine years and have never had a problem. When he needs a replacement part, it is as simple as calling his local Big Dipper® representative, and the next day the part arrives and is installed. The money he has saved from using Big Dipper® has been immense as well. Without it, he would have had to tear up the parking lots and install large expensive grease traps (in addition to paying large non-compliance fines.)
As was apparent to Management Specialists, Inc., even the most dire situations can be solved with simple solutions. In this case, the simple solution was found in a Big Dipper® unit.
