Mary's Pizza
Mary's Pizza Shack, headquartered in Boyes Hot Springs, CA, was presented a problem seven years ago when it opened a franchise in Napa, CA. Not only did they face compliance laws and large installation costs for interceptor systems, but confronted space restrictions as well.
Vince Albano, the Operations Manager of Mary's Pizza Shack, says that he was first introduced to the Big Dipper® product line in 1990. They were building a franchise in the Napa area in California, and faced strict compliance laws. Vince says "we were introduced to the Big Dipper® by the Napa Sanitation Department. They recommended it to us."

Not only were they facing compliance codes, but confronted large installation and maintenance costs for a grease interceptor system as well as space restrictions. They had little room to install a grease trap, and wanted to avoid the large installation and maintenance costs involved. So, Mary's Pizza turned to Big Dipper®. The ease of installation, the compact size of the unit, and its immediate effectiveness delighted those involved. The Napa, CA, installation was the first of many for the chain. In the following years, Mary's Pizza has installed six units into their restaurants and have plans to install more.
In their Sonoma restaurant, the Sanitation Department required that the Big Dipper® be independently tested. In fact, this unit was tested three times by three different firms in one year, with tests ranging from polar and non-polar grease, suspended solids, and dissolved solids. The results were impressive. Not only are the Big Dippers effective, they are easy to use. Vince remarked on the ease of installation, maintenance, and reliability.
In terms of avoided costs by installing Big Dipper® units, Vince estimates that he has saved $1,000 per year per location in maintenance costs. He has become a strong advocate of the Big Dipper® product line.
