Montgomery Inn
The Montgomery Inn in Cincinnati, Ohio is famous for one thing. Slow-roasted, sweet ribs. This establishment consists of five separate restaurants, with one site cooking all of the ribs and then shipping the ribs to the other four. It was in this particular site that a major problem developed. A prodigious amount of grease was being produced by the ovens cooking their ribs. According to Jay Essell, the Maintenance Director for the Inn, the kitchen was cooking 250 twenty-five pound cases of ribs per day. The enormous amount of effluent grease from these ribs were causing tremendous problems and choking their sewer lines.

Fortunately for rib-lovers, Big Dipper® provided the solution. A W-350-IS (Product Catalog) was installed servicing the ovens and the pot-washing sink. After the installation was completed in 1992, a dramatic difference was noted. The effluent grease problems simply evaporated. There were no more problems in the lines from the basting ribs. Today, Jay estimates that the W-350-IS (Product Catalog) is removing around 1400 pounds of grease per week. He has had no problems with the unit, nor has he had to replace any parts. In nearly five years of use, an estimated 364,000 pounds of grease have been removed by the Big Dipper® W-350-IS (Product Catalog). And most importantly, Cincinnati was able to retain its favorite ribs.
