Several years ago, the Peachtree Executive Conference Center in Peachtree City, Georgia faced two major problems. First, the health inspectors were honing in on effluent grease released into the sewer system. The Center had high grease effluent. According to Gene Chinn, the Chief of Maintenance for the Center, their problems originated around seven years ago. As he states, “the health inspector began cracking down on us.” They had an unsatisfactory amount of grease flowing from their kitchen into the sewer line. Until then, they had been using a grease trap, which not only was working inefficiently, but also had enormous operating expenses. Before they installed their two Big Dipper units, they had been pumping out their trap once a week at a cost of $200 per pumping. This translated into $10,400 per year on pumping costs alone.
Enter Big Dipper. After installation of units at the dishwashing station and the pot washing sink, their pumping requirements fell from once every week to once every six weeks. This reduced their annual grease trap pumping costs to just $1,800 a year, or a savings of $8,600 per annum. Incidentally, they also came into compliance with the Health Department. With the Health Department satisfied at their clean flows into the sewer and immense budgetary savings with their grease trap maintenance, the Peachtree Executive Conference Center is quite pleased with their Big Dipper units and their ability to solve effluent grease problems and the savings associated with using Big Dipper® equipment.
