The following is paraphrased from a letter sent to Big Dipper® by Diana Bellendir, the general manager of the Village Inn® in Greeley, Colorado.

Dear Sirs:

The Village Inn in Greeley, Colorado has recently installed a Big Dipper® W-200-IS (Product Catalog) in June. We did this upon a recommendation from the Colorado Department of Health to replace our garbage disposal and as an alternative to an underground grease trap. We had just remodeled our kitchen, and were not required to have a grease trap at the time, but the rules changed. This above ground grease separator allowed us to meet the compliance code without digging up our kitchen sewer lines again.

The Big Dipper® unit sits underneath our dishwashing area and is attached to the pre-rinse spray station. It separates any grease from our dishes or pans before it flows into the sewer lines. Your equipment is very easy to install. All it requires are two pieces of PVC pipe and an electrical PLU outlet. The machine is very easy to maintain and even easier to operate. You only need to empty the grease collector twice a week. It is no problem to monitor the grease level rising in the collector. Big Dipper® is much simpler and safer than a garbage disposal. I really appreciated the recommendation from the city of Greeley about your product
